Doretta Lau’s easy to make cashew matcha latte
This is a creamy dairy free cashew matcha latte. I promise. The only thing is you need a powerful blender like a Vitamix for it to work.
- 2oz raw unsalted cashew nuts
- 1 cup water
- 1/2 tsp matcha powder
- sweetener of choice to taste
- dash of salt
Soak cashew nuts in water overnight. Rinse them before use.
Place cashew nuts, 1 cup of water, sweetener, and dash of salt in the blender and blend on the highest setting until smooth and creamy.
Warm up in a saucepan. Enjoy!
I know you didn’t want to scroll through a ton of preamble to get to the cashew matcha latte recipe, but I wanted to share why I wrote up this recipe. I’m doing a DIY version of the Clean program right now to reset and clear up some health problems so I can finish writing my novel. I am determined to finish my first draft by March 8, 2020 and I have a pact with writer Lindsay Wong that we are going to finish our books.
Though the book Clean recommends no caffeine, the website has cleared matcha as an approved drink. (I am all about finding loopholes.) Their matcha latte recipe is a bit labour intensive and I prefer efficiency. So I set off to figure out a viable alternative.
I watched a video about making cashew milk and decided rather than making a batch for the week I would make one cup as needed every morning. So far it’s been delightful waking up and making this drink.
This amount of matcha doesn’t create tension in my jaw or headaches from too much caffeine. I am able to sleep by 10pm. Time to get to work on the novel!
